Instructions

Step 1: Prepare the Apple Mixture

  1. Peel, core, and finely dice two large apples into small pieces.
  2. In a small bowl, toss the apples with 1 teaspoon of cinnamon to enhance their flavor.

Step 2: Make the Batter

  1. In a large mixing bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  2. In a separate bowl, whisk together milk, eggs, vanilla extract, and melted butter.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  4. Gently fold in the diced apples, ensuring they are evenly distributed.

Step 3: Fry the Apple Fritter Bites

  1. Heat 2-3 inches of vegetable oil in a deep frying pan over medium heat until it reaches 350°F (175°C).
  2. Using a small cookie scoop or spoon, drop tablespoon-sized amounts of batter into the hot oil.
  3. Fry for 2-3 minutes per side, flipping halfway, until golden brown and crispy.
  4. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

Step 4: Coat the Fritter Bites

For Cinnamon Sugar Coating:

  1. In a small bowl, mix granulated sugar and cinnamon.
  2. Roll the warm fritter bites in the mixture until fully coated.

For Vanilla Glaze:

  1. In a bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle over the warm fritter bites before serving.

Step 5: Serve and Enjoy!

Serve immediately while warm and crispy!

Notes

✔️ Use firm apples like Granny Smith for a tart contrast or Honeycrisp for natural sweetness.
✔️ Don’t overcrowd the frying pan, or they won’t cook evenly.
✔️ Make sure the oil is hot enough before frying, or the fritters will absorb too much oil.
