This Apple Cranberry Pecan Cake blends tart cranberries, sweet apples, and buttery pecans into a moist and festive bundt cake. Rustic yet elegant, it’s the perfect dessert for holidays, cozy gatherings, or winter baking, finished with a dusting of powdered sugar.

- 1 cup (200 g) granulated sugar
- 1/2 cup (100 g) brown sugar
- 1 cup (225 g) unsalted butter, softened
- 3 large eggs
- 2 cups (250 g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 cup (240 ml) buttermilk
- 1 tsp vanilla extract
- 2 medium apples, peeled and diced (about 2 cups / 220 g)
- 1 cup (100 g) fresh or frozen cranberries
- 1 cup (120 g) pecans, chopped (toasted preferred)
- Optional: powdered sugar, for dusting
Instructions
- Preheat & Prep: Preheat oven to 350°F (175°C). Generously butter and flour a bundt pan.
- Cream Butter & Sugar: Beat butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, then stir in vanilla.
- Mix Dry Ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine Batter: Add dry mixture to wet in three additions, alternating with buttermilk. Stir until just combined.
- Fold In Add-Ins: Gently fold in apples, cranberries, and pecans. Batter will be thick.
- Bake: Pour into prepared bundt pan. Bake 45–55 minutes, until a toothpick comes out clean.
- Cool & Finish: Cool in pan 15 minutes before turning out. Dust with powdered sugar once cooled.
Notes
- Toast pecans before adding for deeper flavor.
- Fresh cranberries hold up best, but frozen can be used directly from frozen.
- Don’t overmix once fruit and nuts are added.
- Ensure bundt pan is well-greased and floured to prevent sticking.
- Serve with whipped cream, ice cream, or caramel glaze for extra indulgence.
