  • 1/2 cup (100 g) brown sugar
  • 1 cup (225 g) unsalted butter, softened
  • 3 large eggs
  • 2 cups (250 g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup (240 ml) buttermilk
  • 1 tsp vanilla extract
  • 2 medium apples, peeled and diced (about 2 cups / 220 g)
  • 1 cup (100 g) fresh or frozen cranberries
  • 1 cup (120 g) pecans, chopped (toasted preferred)
  • Optional: powdered sugar, for dusting

Instructions

  1. Preheat & Prep: Preheat oven to 350°F (175°C). Generously butter and flour a bundt pan.
  2. Cream Butter & Sugar: Beat butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, then stir in vanilla.
  3. Mix Dry Ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Combine Batter: Add dry mixture to wet in three additions, alternating with buttermilk. Stir until just combined.
  5. Fold In Add-Ins: Gently fold in apples, cranberries, and pecans. Batter will be thick.
  6. Bake: Pour into prepared bundt pan. Bake 45–55 minutes, until a toothpick comes out clean.
  7. Cool & Finish: Cool in pan 15 minutes before turning out. Dust with powdered sugar once cooled.

  • Toast pecans before adding for deeper flavor.
  • Fresh cranberries hold up best, but frozen can be used directly from frozen.
