- 1 cup (200g) granulated sugar
- ½ cup (100g) light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup (120ml) buttermilk
- 2 cups (240g) apples, peeled and finely chopped
- Optional: powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan and optionally line with parchment.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Cream butter, granulated sugar, and brown sugar until light and fluffy (2–3 minutes).
- Beat in eggs one at a time, then stir in vanilla extract.
- Alternate adding dry mixture and buttermilk to the batter, beginning and ending with flour mixture. Mix until just combined.
- Fold in chopped apples gently.
- Pour batter into prepared pan, smoothing the top.
- Bake 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan. Dust with powdered sugar or serve with whipped cream or yogurt if desired.
