- 2 medium apples, peeled and chopped
- 1 ½ cups low-fat cottage cheese
- 2 large eggs
- ½ cup rolled oats

- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- Pinch of salt

Instructions
- Preheat: Heat the oven to 350°F (175°C). Grease or line a small baking dish (8×8 or similar).
- Prep apples: Peel and chop apples into small bite-sized pieces.
- Mix wet ingredients: In a large bowl, combine cottage cheese, eggs, Truvia, vanilla, cinnamon, baking powder, and salt. Mix until smooth.
- Add oats & apples: Stir in rolled oats and chopped apples. The mixture will be loose — this is normal.
- Bake: Pour mixture into the prepared dish, spread evenly, and bake for 35–40 minutes until golden and set.
- Cool & serve: Let cool slightly before slicing. Serve warm or chilled.
