- For the Cream Cheese Filling:
- ½ cup (113g) unsalted butter, room temperature
- 8 oz (226g) cream cheese, softened
- 2 ½ cups (300g) powdered sugar
- ½ teaspoon vanilla extract
Instructions
- In a saucepan, simmer apple cider over medium heat until reduced to about ½ cup. Cool completely.
- In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
- In another bowl, cream butter, oil, brown sugar, and granulated sugar until fluffy. Add eggs, then vanilla, and cooled cider reduction.
- Gradually add dry ingredients to wet mixture, alternating with buttermilk. Mix until just combined.
- Preheat oven to 350°F (177°C). Line baking sheets with parchment. Scoop batter onto sheets, spacing evenly. Bake 10–12 minutes until set. Cool completely.
- Beat cream cheese and butter until smooth. Add powdered sugar and vanilla; beat until fluffy.
- Pipe or spoon filling onto flat sides of half the cakes. Top with remaining cakes to form sandwiches.
