  • 1/3 cup (80ml) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) buttermilk
  • For the Cream Cheese Filling:
  • ½ cup (113g) unsalted butter, room temperature
  • 8 oz (226g) cream cheese, softened
  • 2 ½ cups (300g) powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. In a saucepan, simmer apple cider over medium heat until reduced to about ½ cup. Cool completely.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, cream butter, oil, brown sugar, and granulated sugar until fluffy. Add eggs, then vanilla, and cooled cider reduction.
  4. Gradually add dry ingredients to wet mixture, alternating with buttermilk. Mix until just combined.
  5. Preheat oven to 350°F (177°C). Line baking sheets with parchment. Scoop batter onto sheets, spacing evenly. Bake 10–12 minutes until set. Cool completely.
  6. Beat cream cheese and butter until smooth. Add powdered sugar and vanilla; beat until fluffy.
  7. Pipe or spoon filling onto flat sides of half the cakes. Top with remaining cakes to form sandwiches.
