Easy to make, freezer-friendly, and full of warm spice, they’re everything you love about fall baking in one delicious bite.

Ingredients

Scale

For the Muffins:

  • 2 cups all-purpose flour (250 g)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup granulated sugar (100 g)
  • ½ cup brown sugar (100 g)
  • ½ cup unsalted butter, melted (115 g)
  • 2 large eggs
  • ¾ cup apple butter (180 g)
  • ½ cup milk or buttermilk (120 ml)
  • 1 teaspoon vanilla extract

For the Streusel Topping:

  • ½ cup flour
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • 3 tablespoons cold butter, cubed

Instructions

  1. Preheat oven: Set oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. Make streusel: Mix flour, brown sugar, and cinnamon in a bowl. Cut in cold butter until crumbly; set aside.
  3. Mix dry ingredients: In a large bowl, whisk flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Mix wet ingredients: In another bowl, whisk melted butter with both sugars. Add eggs, apple butter, milk, and vanilla; whisk until smooth.
  5. Combine: Gently fold the wet ingredients into the dry mixture until just combined—do not overmix.
  6. Fill muffin cups: Divide batter evenly between liners, filling ¾ full. Sprinkle streusel on top.
  7. Bake: Bake for 18–22 minutes, or until a toothpick comes out clean.
  8. Cool & serve: Let muffins cool 10 minutes before transferring to a rack. Serve warm or at room temperature.

Notes

  • Use apple butter, not applesauce: It adds richer flavor and thicker texture.
  • Don’t overmix: Keeps muffins light and fluffy.
  • Room-temperature ingredients: Help everything blend smoothly.
  • Storage: Store in airtight container 3 days at room temp or freeze up to 2 months.
  • Variations: Try as mini muffins (12–14 mins) or bake into a loaf (45–50 mins).
