Ingredients
4 boneless, skinless chicken breasts
1 tablespoon olive oil
Salt and black pepper to taste
1 packet dry Italian dressing mix
8 oz cream cheese, softened
1 can (10.5 oz) cream of chicken soup
½ cup chicken broth
2 cups cooked white rice
1 cup shredded mozzarella or Swiss cheese
½ teaspoon garlic powder
Fresh parsley for garnish (optional)
Instructions

Notes
- Preheat your oven to 375°F. Lightly grease a 9×13-inch baking dish.
- In a skillet, heat olive oil over medium heat. Season chicken breasts with salt, pepper, and half of the Italian dressing mix. Sear until golden on both sides, about 3-4 minutes per side. Remove and set aside.
- In a saucepan, combine cream cheese, cream of chicken soup, chicken broth, garlic powder, and remaining Italian seasoning. Whisk over medium heat until smooth and heated through.
- Spread cooked rice evenly in the bottom of the casserole dish. Place seared chicken breasts on top of the rice.
- Pour the creamy sauce over the chicken and rice, spreading evenly.
- Sprinkle shredded cheese over the top and cover with foil.
- Bake for 25-30 minutes, then remove foil and bake an additional 5-10 minutes until cheese is bubbly and slightly golden.
- Let rest for 5 minutes before serving. Garnish with chopped parsley if desired.
