For the Dough:
- 3½ cups (420g) all-purpose flour
- 2¼ tsp active dry yeast
- ¼ cup granulated sugar
- ½ tsp salt
- ¾ cup warm milk
- ¼ cup unsalted butter, melted
- 1 large egg
For the Almond Filling:
- ½ cup unsalted butter, softened
- ½ cup light brown sugar
- ½ cup almond paste or almond filling
- 1 tsp almond extract
For the Icing:
- 1 cup powdered sugar
- 2–3 tbsp milk or cream
- ¼ tsp almond extract
- Optional: sliced almonds for garnish
Instructions
- Activate Yeast: Mix warm milk, sugar, and yeast. Let stand 5–10 minutes until foamy.
- Make Dough: Add butter, egg, salt, and flour. Knead until smooth and elastic.
- First Rise: Cover and let rise 1–1½ hours until doubled.
- Prepare Filling: Beat butter, brown sugar, almond paste, and almond extract until smooth.
- Roll & Fill: Roll dough into a rectangle, spread filling evenly, roll into a log, and slice into 12 rolls.
- Second Rise: Place in greased pan, cover, and rise 30–45 minutes.
- Bake: Bake at 350°F (175°C) for 20–25 minutes until golden.
- Glaze: Mix icing ingredients and drizzle over warm rolls. Garnish if desired.
Notes
- Use softened butter, not melted, for the filling.
- If dough is sticky, chill briefly before rolling.
- Great for overnight prep—refrigerate before baking.
- Do not overbake to keep rolls soft and fluffy.
- Almond paste can be softened with a splash of milk if thick.
