For the Dough:

  • 3½ cups (420g) all-purpose flour
  • 2¼ tsp active dry yeast
  • ¼ cup granulated sugar
  • ½ tsp salt
  • ¾ cup warm milk
  • ¼ cup unsalted butter, melted
  • 1 large egg

For the Almond Filling:

  • ½ cup unsalted butter, softened
  • ½ cup light brown sugar
  • ½ cup almond paste or almond filling
  • 1 tsp almond extract

For the Icing:

  • 1 cup powdered sugar
  • 23 tbsp milk or cream
  • ¼ tsp almond extract
  • Optional: sliced almonds for garnish

Instructions

  1. Activate Yeast: Mix warm milk, sugar, and yeast. Let stand 5–10 minutes until foamy.
  2. Make Dough: Add butter, egg, salt, and flour. Knead until smooth and elastic.
  3. First Rise: Cover and let rise 1–1½ hours until doubled.
  4. Prepare Filling: Beat butter, brown sugar, almond paste, and almond extract until smooth.
  5. Roll & Fill: Roll dough into a rectangle, spread filling evenly, roll into a log, and slice into 12 rolls.
  6. Second Rise: Place in greased pan, cover, and rise 30–45 minutes.
  7. Bake: Bake at 350°F (175°C) for 20–25 minutes until golden.
  8. Glaze: Mix icing ingredients and drizzle over warm rolls. Garnish if desired.

Notes

  • Use softened butter, not melted, for the filling.
  • If dough is sticky, chill briefly before rolling.
  • Great for overnight prep—refrigerate before baking.
  • Do not overbake to keep rolls soft and fluffy.
  • Almond paste can be softened with a splash of milk if thick.
