Ingredients

Scale

Ingredients:

  • 1 cup almond flour
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1/2 cup sour cream

Instructions

  1. Preheat the Oven & Prepare the Pan: Preheat your oven to 350°F (175°C). Grease a 9-inch cake pan with butter or non-stick spray and line with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the almond flour, all-purpose flour, baking powder, baking soda, ground cardamom, and salt. Set aside.
  3. Cream Butter and Sugar: In a large bowl, cream the softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. Combine Dry & Wet Ingredients: Add the dry ingredients in batches, alternating with the milk and sour cream. Start and end with dry ingredients. Mix until just combined.
  5. Bake the Cake: Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Allow the cake to cool in the pan for 10 minutes before transferring to a cooling rack to cool completely. Slice and serve, optionally dusted with powdered sugar.

Notes

  • Do Not Overmix: Avoid overmixing the batter to keep the cake light and fluffy.
  • Room Temperature Ingredients: Ensure butter and eggs are at room temperature to achieve the best texture.
  • Storage: Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
