1 (20-ounce) package refrigerated cheese tortellini 1 tablespoon butter 1 tablespoon olive oil 3 cloves garlic, minced 2 tablespoons all-purpose flour 2 cups milk 1 cup heavy cream ½ cup grated Parmesan cheese 1 cup shredded mozzarella cheese ½ teaspoon salt ¼ teaspoon black pepper ½ teaspoon Italian seasoning 2 tablespoons fresh parsley, chopped (for garnish) Optional: 2 cups cooked chicken, diced 2 cups fresh spinach


Instructions

1. Bring a large pot of salted water to a boil. Cook tortellini 1–2 minutes less than package directions. Drain and set aside. 2. In a saucepan, melt butter and olive oil over medium heat. Add garlic and cook 30 seconds until fragrant. Stir in flour and cook 1 minute. Gradually whisk in milk and heavy cream, cooking until thickened (5–7 minutes). 3. Stir in Parmesan, salt, pepper, and Italian seasoning. Taste and adjust seasoning. 4. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish. In a large bowl, combine cooked tortellini, Alfredo sauce, and optional chicken or spinach. Transfer to baking dish and top with mozzarella. 5. Bake uncovered 20–25 minutes until bubbly and golden. Garnish with parsley and serve warm.
