Instructions
1. Prep your zucchini
Wash and dry the zucchini. Slice it into thin rounds using a sharp knife or mandoline slicer—about 1/8 inch thick works best for even crisping.
2. Season the slices
In a bowl, toss the zucchini rounds with olive oil, breadcrumbs, Parmesan (if using), garlic powder, salt, and pepper until evenly coated.
3. Arrange in the air fryer
Place the zucchini slices in a single layer in the air fryer basket. Don’t overcrowd—work in batches if needed.
