These air fryer teriyaki salmon bites are crispy on the outside, tender and flaky on the inside, and coated in a sweet-savory homemade teriyaki glaze. They’re quick, healthy, and perfect for weeknight dinners, meal prep, or building flavorful salmon bowls.

- 1 pound salmon fillet, skin removed and cut into 1-inch cubes
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon maple syrup or honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon freshly grated ginger
- 1 clove garlic, minced
- 1/2 teaspoon cornstarch (optional, for thickening sauce)
- Cooking spray or olive oil spray
For Garnish:
- Sesame seeds
- Sliced green onions
Instructions
- Prep the Salmon: Cut salmon into evenly sized 1-inch cubes and pat dry with a paper towel.
- Make the Marinade: In a bowl, whisk together soy sauce, maple syrup, rice vinegar, sesame oil, ginger, and garlic.
- Marinate: Add salmon to the bowl and toss to coat. Marinate for 10–30 minutes if time allows.
- Preheat Air Fryer: Preheat air fryer to 400°F (200°C) and lightly spray the basket with oil.
- Air Fry: Arrange salmon bites in a single layer. Air fry for 6–8 minutes, flipping halfway, until slightly crisp and cooked through.
- Optional Glaze: Simmer leftover marinade in a small saucepan. Whisk in cornstarch mixed with water and cook until thickened, then drizzle over salmon.
- Serve: Garnish with sesame seeds and green onions and serve immediately.

- Patting the salmon dry helps achieve better caramelization.
- Avoid overcrowding the air fryer basket so air circulates evenly.
- Flip gently to prevent breaking the salmon pieces.
