Ingredients

  • 1 pound salmon fillet, skin removed and cut into 1-inch cubes
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon freshly grated ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon cornstarch (optional, for thickening sauce)
  • Cooking spray or olive oil spray

For Garnish:

  • Sesame seeds
  • Sliced green onions

Instructions

  1. Prep the Salmon: Cut salmon into evenly sized 1-inch cubes and pat dry with a paper towel.
  2. Make the Marinade: In a bowl, whisk together soy sauce, maple syrup, rice vinegar, sesame oil, ginger, and garlic.
  3. Marinate: Add salmon to the bowl and toss to coat. Marinate for 10–30 minutes if time allows.
  4. Preheat Air Fryer: Preheat air fryer to 400°F (200°C) and lightly spray the basket with oil.
  5. Air Fry: Arrange salmon bites in a single layer. Air fry for 6–8 minutes, flipping halfway, until slightly crisp and cooked through.
  6. Optional Glaze: Simmer leftover marinade in a small saucepan. Whisk in cornstarch mixed with water and cook until thickened, then drizzle over salmon.
  7. Serve: Garnish with sesame seeds and green onions and serve immediately.
