  • 6 slices thick-cut bacon
  • 2 slices of sourdough bread (or preferred sandwich bread)
  • 1 tablespoon butter (for toasting the bread)
  • 1 handful arugula or lettuce
  • 12 teaspoons mayonnaise (or more to taste)
  • 12 teaspoons Dijon mustard (optional for tang)
  • Salt and pepper, to taste

Optional Add-ons:

  • Sliced tomato
  • Sliced avocado
  • Fried egg
  • Sharp cheddar or Swiss cheese

Instructions

Step 1: Cook the Bacon

Place bacon slices in a cold skillet. Turn the heat to medium and cook slowly, flipping occasionally, until crispy and golden brown. Transfer to a paper towel-lined plate to drain.

Pro Tip: Starting in a cold pan renders the fat better and leads to evenly crisped bacon.

Step 2: Toast the Bread

Butter both slices of bread lightly. Toast in the skillet until golden and crisp. Alternatively, use a toaster and skip the butter if preferred.

Step 3: Mix the Sauce

In a small bowl, mix mayonnaise and Dijon mustard for a creamy, tangy sandwich spread. Adjust amounts to taste.

Step 4: Assemble the Sandwich

Spread the mayo-mustard sauce on both slices of toast. Layer with crispy bacon, a handful of greens, and any optional extras like tomato or cheese.

Notes
