- 1 can (14 oz) sweetened condensed milk
- ½ cup freshly squeezed lemon juice

- 1 container (8 oz) whipped topping (like Cool Whip), thawed
- ½ teaspoon vanilla extract (optional)

- Crushed graham cracker crumbs for garnish
Instructions
- Make the crust:
In a bowl, combine graham cracker crumbs and sugar. Stir in melted butter and mix until evenly coated. Press the mixture into the bottom and up the sides of a 9-inch pie plate. Freeze the crust for 10–15 minutes while you prepare the filling. - Prepare the filling:
In a large bowl, whisk together the sweetened condensed milk, lemon juice, lemon zest, and vanilla extract until smooth. Gently fold in the whipped topping until fully incorporated. - Assemble the pie:
Pour the filling into the chilled crust and smooth the top with a spatula. - Freeze:
Cover the pie tightly with plastic wrap or foil and freeze for at least 4–6 hours, or overnight, until firm. - Serve:
Let sit at room temperature for 10 minutes before slicing. Garnish with whipped topping, lemon slices, or berries if desired.
Notes
Use freshly squeezed lemon juice and zest for the brightest flavor. Let the pie freeze completely before slicing to ensure clean edges. Top with whipped cream and lemon zest just before serving. Store frozen for up to 1 month in an airtight container. Great make-ahead dessert for summer entertaining.
