For the stuffed chicken:
- 4 boneless, skinless chicken breasts
- 8 slices fresh mozzarella cheese
- 1–2 tomatoes, sliced (Roma or vine-ripened work best)
- 12 fresh basil leaves
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- 1 tbsp olive oil (for searing)
- Toothpicks or kitchen twine (to secure)
Optional for serving:
- Balsamic glaze (store-bought or homemade)
- Fresh basil and extra tomato slices for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Prep the chicken: Pat the chicken breasts dry. Carefully cut a deep pocket into the side of each breast, being careful not to cut through the bottom.
- Stuff the chicken: Fill each pocket with 2 slices of mozzarella, 2–3 tomato slices, and 3 basil leaves. Use toothpicks to secure the edges closed.
- Season: Combine garlic powder, Italian seasoning, salt, and pepper. Rub this mixture over the outside of the stuffed chicken.
- Sear: Heat olive oil in a large skillet over medium-high heat. Add the stuffed chicken breasts and sear for 3–4 minutes per side until golden brown.
- Bake: Transfer skillet to the oven (or move chicken to a baking dish if your skillet isn’t oven-safe). Bake for 15–18 minutes, or until the internal temperature reaches 165°F (74°C).
- Finish and serve: Remove toothpicks and drizzle with balsamic glaze. Garnish with extra basil if desired.
Notes
Use thick chicken breasts and slice pockets carefully to avoid tearing. Don’t overstuff to prevent leaking. Searing the chicken before baking locks in moisture and adds flavor. Drizzle with balsamic glaze just before serving for a beautiful finish. Let the chicken rest before slicing to retain juices.
