- 6 ears fresh corn, husked
- 4 tablespoons unsalted butter, melted
- Zest of 1 lime
- Juice of 1 lime (about 2 tablespoons)
- ½ teaspoon chili powder (optional, for spice)
- ½ teaspoon kosher salt
- Freshly ground black pepper, to taste
- Chopped cilantro, for garnish (optional)
- Extra lime wedges, for serving
Instructions
- Preheat your grill: Heat to medium-high (about 400°F). Clean and lightly oil the grates.
- Prepare the lime butter: In a small bowl, whisk together melted butter, lime zest, lime juice, salt, pepper, and chili powder if using. Set aside.
- Grill the corn: Place husked corn directly on the grill. Turn every 2–3 minutes until all sides are lightly charred and kernels are tender, about 10–12 minutes.
- Brush with lime butter: Remove corn from grill. While still hot, brush generously with the lime butter mixture.
- Garnish and serve: Sprinkle with chopped ci
