  • 2 pounds ground beef (80/20 recommended for best juiciness)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon Worcestershire sauce (optional for umami boost)

Optional toppings and extras:

  • Sliced cheddar, American, or Swiss cheese
  • Lettuce, tomato, onion (red or grilled), and pickles
  • Ketchup, mustard, mayo, or burger sauce
  • Brioche buns, sesame seed buns, or potato rolls

Instructions

  1. Prep the beef: Place the ground beef in a large bowl. Add salt, pepper, and optional garlic powder and Worcestershire sauce. Mix gently with your hands until just combined—don’t overwork it.
  2. Form the patties: Divide the mixture into 6 equal portions (or 4 for larger burgers). Gently shape into patties about ¾-inch thick. Make a shallow indent in the center of each patty to help it cook evenly and prevent puffing up.
  3. Preheat the grill or skillet: Heat your grill to medium-high (around 400–450°F). For stovetop cooking, use a cast-iron skillet over medium-high heat.
  4. Cook the patties: Place burgers on the grill or skillet. Cook for 3–5 minutes per side for medium doneness, flipping only once. Add cheese during the last minute of cooking and cover to melt.
  5. Toast the buns (optional): Place cut-side down on the grill or pan for 1–2 minutes until golden.
  6. Assemble: Place patties on the bottom bun and add your favorite toppings. Serve immediately.

Notes

Use ground chuck with 80/20 fat ratio for the juiciest results. Form patties gently and create a small indentation in the center of each to ensure even cooking. Flip once, and never press down while grilling. Add cheese during the last minute of cooking. Let burgers rest for a few minutes before assembling with toppings.
