Ingredients

- 4 cups cubed seedless watermelon (about 1 small melon)
- ¾ cup crumbled feta cheese (or cubed block feta)
- ¼ cup fresh mint leaves, torn or chopped
- 1–2 tablespoons olive oil
- 1 tablespoon fresh lime or lemon juice
- Salt and black pepper, to taste
Optional Add-ins:
- ¼ cup thinly sliced red onion
- ½ cup arugula or baby spinach
- Balsamic glaze drizzle
- Chopped cucumber
- Toasted pine nuts or pumpkin seeds
- Fresh basil leaves (as a substitute or addition to mint)
Instructions
- Cube the watermelon: Cut watermelon into bite-sized chunks. Remove any seeds if needed and place cubes in a large mixing bowl.
- Add feta and mint: Sprinkle crumbled feta and chopped mint over the watermelon.
- Whisk the dressing: In a small bowl, whisk together olive oil, lime or lemon juice, salt, and pepper.
- Toss gently: Drizzle the dressing over the salad and toss gently to combine without breaking up the watermelon or cheese.
- Serve or chill: Serve immediately, or chill for 15–30 minutes to let the flavors meld.
- Garnish (optional): Just before serving, drizzle with balsamic glaze or top with extra mint for a polished finish.
Notes
Use sweet, seedless watermelon for best results. Add feta and dressing just before serving to preserve freshness. Fresh mint gives the salad a cooling contrast—basil can also be used for variety. Serve chilled, and drizzle with balsamic glaze for added flavor and presentation.
