Description

Looking for a light, crisp, and refreshing dish that’s perfect for warm-weather meals? This Cucumber Blueberry Salad is a beautiful blend of crunchy cucumbers, juicy blueberries, creamy feta cheese, and a hint of fresh herbs.

Ingredients

Scale

  • 2 cups fresh blueberries
  • 1 large cucumber, thinly sliced (about 1 ½ cups)
  • ½ cup crumbled feta cheese
  • 2 tablespoons fresh dill, chopped (or fresh basil if preferred)
  • 2 tablespoons red onion, thinly sliced or minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar (or lemon juice)
  • ½ teaspoon honey (optional for added sweetness)
  • Salt and pepper to taste

Optional Add-ins:

  • ½ cup baby arugula or spinach
  • Chopped walnuts or slivered almonds for crunch
  • Avocado chunks for a creamy texture

Instructions

  1. Prep the ingredients: Wash and dry blueberries and cucumber. Slice cucumber thinly and set aside. Finely chop fresh dill and red onion.
  2. Make the dressing: In a small bowl, whisk together olive oil, red wine vinegar (or lemon juice), a touch of honey, salt, and pepper until combined.
  3. Combine salad: In a large salad bowl, add cucumber slices, blueberries, red onion, and fresh herbs. Drizzle the dressing over the top and toss gently to coat.
  4. Add feta: Sprinkle crumbled feta cheese on top. Gently fold it into the salad or leave it on top for presentation.
  5. Chill and serve: Let the salad chill in the fridge for 10–15 minutes before serving, allowing the flavors to blend beautifully.

Notes

Fresh herbs elevate simple summer salads. Dill adds a tangy, slightly anise-like flavor that pairs wonderfully with feta and cucumber. Basil offers a sweeter, peppery note if you prefer a milder herbal touch. You can also experiment with mint for a cooling twist. Chop herbs finely and add them just before serving to keep their flavor vibrant.
