If you’ve got a couple of ripe bananas sitting on your counter, you’re just minutes away from one of the best desserts you’ll ever bake.

- ½ cup (113g) unsalted butter, melted
- 1 cup (200g) light brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 2 ripe bananas, mashed (about ¾ to 1 cup)
- 1 cup (125g) all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- Optional: ½ tsp cinnamon or nutmeg for warmth
Add-ins (optional):
- ½ cup chopped walnuts or pecans
- ½ cup chocolate chips
- 2 tbsp shredded coconut
Instructions
- Preheat oven: Set your oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper or grease it lightly.
- Mix wet ingredients: In a medium bowl, whisk together melted butter and brown sugar until smooth. Add in the egg and vanilla, mixing well.
- Add mashed bananas: Stir in the mashed bananas until fully combined.
- Incorporate dry ingredients: Add flour, baking powder, salt, and any optional spices. Stir just until no streaks of flour remain—do not overmix.
- Add extras: Fold in chocolate chips, nuts, or other add-ins if using.
- Bake: Pour the batter into your prepared pan and smooth the top. Bake for 25–30 minutes, or until the center is set and a toothpick comes out with moist crumbs.
- Cool and slice: Let the blondies cool in the pan for at least 20 minutes before slicing into bars.
Notes
Use bananas that are very ripe—lots of brown spots mean sweeter flavor and softer texture.
Melted butter gives these blondies their dense, fudgy consistency.
Don’t overbake. The blondies should be just set in the middle with a light golden edge.
For clean slices, let them cool completely before cutting.
Add-ins are totally optional but can elevate your banana blondies from simple to sensational.
